Are you looking for an easy fall dessert to bring to a gathering? This is just the recipe for you. These pumpkin cheescake bars are so simple to make, but taste delicious. I brought these to a family gathering and they were a BIG hit! You only need 9 ingredients! They take roughly 30 minutes to prep, and 25 minutes to cook! They are so yummy and delicious and everone will enjoy them!
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 6 tablespoons unsalted butter (melted)
- 1/4 cup sugar
- 2 packages cream cheese (softened)
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup pumpkin puree
- 1/4 cup sour cream
- 1 teaspoon pumpkin pie spice

Instructions:
- Preheat oven to 350 degrees.
2. Crush up the graham crackers. Either crush them in a Ziploc bag or I used a food processor to make sure they were crushed up very finely.
3. Once your graham crackers are crushed, melt your butter.
4. Add your melted butter and sugar to the crushed up graham cracker crumbs. Mix well.

5. Grab a 9×13 inch baking dish and pour in your graham cracker mixture. Press the mixture into the pan and up the sides to create the crust. Bake the crust in the oven for 10 minutes.

6. In another bowl add your softened cream cheese and sugar. Beat these together until smooth.

7. Next, add in the vanilla and eggs. Beat until smooth.

8. Divide the batter equally into two separate bowls. To one half of the batter add in the pumpkin puree, sour cream, and pumpkin pie spice. Mix this together until smooth.

9. Once your crust is done baking, add both batters to the pan. Alternate between the two. Once all your batter is in the pan use a skewer to swirl it around.
10. Bake for 25 minutes.
11. Let cool before serving, and enjoy!

Tips:
- I did double the crust. So I did 3 cups of graham cracker crumbs, 12 tablespoons of butter, and 1/2 cup of sugar. It would definitely be enough to keep it as a single batch, but I like more crust!
- I would recommend greasing the bottom of your 9×13 inch pan to make for easy clean up!
- I baked mine for exactly 25 minutes, but if yours does not look cooked you may have to cook it up to 30 minutes!
- I would recommend using a food processor to crush the graham crackers so they are finely crushed!
- I let mine cool completely and then chilled it in the refrigerator before serving!
- Let your cream cheese soften for a few hours before making this recipe!
