Are you looking for a healthy, but sweet snack? These oatmeal energy bites are just the thing for you. They are very easy to make, and you only need a few simple ingredients! This recipe is also budget friendly because you most likely have all the ingredients in your pantry!

What you will need:
- 1 cup oatmeal
- 1/2 cup peanut butter
- 1/2 cup ground flaxseed
- 1/2 cup chocolate chips
- 1/2 cup chia seeds (optional)
- 1/3 cup honey
- 1 tsp. vanilla extract

Mix all of the ingredients listed above together. Let the mixture chill in the fridge for about 30 minutes to make it easier to roll the mixture into balls. After being chilled, scoop out your desired amount of mixture and form into balls. Place these onto a cookie sheet lined with parchment paper for easy clean up. Chill in the fridge before eating. Enjoy!

How should I store these:
You could store these in a Ziploc bag or an airtight container. Store them in the fridge to keep them fresh. You could also freeze these to make them last longer. Freezing them will make for a quick breakfast to grab and go.
Tips:
- Chill the mixture in the fridge for about 30 minutes before rolling into balls. This will make the mixture stick together and easier to roll into balls!
- Use something such as an ice cream scoop to make all the bites roughly the same size!
- Add mini M & M’s to make these into monster cookie energy bites!
- If you are a coconut lover, add in some coconut flakes!
- Chia seeds are optional. You can add them if you like them, but they do not have to be added!
- I recommend using parchment paper on your cookie sheet to make for easy clean up because the mixture is pretty messy!
